An appellation name for you food you may ask?
We are all used to hearing appellation names for wine. Why for food?
1. It is fun! It allows us to greater appreciation and understanding of our food.
When we stop to remember that not all food comes from the same spot, under the
same growing conditions with the same love put into it, we begin to slow down
and really enjoy the full history of the food as we eat it. A farmer who raises
his chickens with the pride of providing the healthiest fowl that he knows will
be sold and enjoyed by his community, is producing in a unique manner.
2. The term appellation transfers well to match the unique situations of growers,
farmers, and food producers in this area. Namely the designations "Sonoma
County", "Russian River", "California" are not adequate
classifications to indicate the common characteristics and defining traits of
a large portion of the food produced in this region. The geographic regions that
comprise the similarly conditioned artisan food producing cultures extent across
county borders matching instead the definitions of the natural land and the values
towards food of the people involved.
